Our team of Registered Dietitians is always looking for ways to promote what we’re passionate about so that we can have a positive impact on those who surround us. With a variety of different coaching styles, personal experiences, and areas of expertise; our RDs are very much aware of the unique journey that everyone must take to reach their own health and wellness goals.

At Philosophy Nutrition, no matter what your goals are, you will get paired with a registered dietitian-nutritionist who is 100% committed to your success. We love helping people make sense of nutrition so that they can gain confidence in their food choices and experience the transformation that comes with healthy lifestyle changes.

Jessica Hess

Meet JESSICA HESS, RD & Fitness Instructor

Owner & Founder of Philosophy Nutrition

Jessica founded Philosophy Nutrition & Fitness in 2009 to share her passion for nutrition and show people in her community how easy and fun it can be to eat healthy, get active and take care of their bodies.

She completed a four-year degree in Food and Nutrition Sciences at the University of Alberta to become a Registered Dietitian, but spent much of that time travelling and studying abroad. Living in Italy and Mexico amongst the locals opened up new worlds of ingredients and ways to enjoy food that continue to influence her food philosophy today. Although she is a big believer in the importance of eating a variety of colourful vegetables each day, she would never say no to a plate of tamales and re-fried pinto beans.

Jessica teaches nutrition courses at NAIT as well as Metro Continuing Education and has been designated as a Team Alberta Sport Science Professional, helping coaches and athletes reach peak performance and optimal health in preparation for the Canada Summer & Winter Games.

In her spare time, she maintains her AFLCA and yoga instructor designations so that she can teach fitness classes such as group cycle and restorative stretch for the County of Strathcona.

To continue her commitment to helping athletes improve sport performance through nutrition, Jessica is a member of the Dietitians of Canada Sport Nutrition Network and frequently pursues continuing education opportunities such as the DC Intensive Sport Nutrition Course and the New York Sport Nutrition Conference.

Version 2Meet LAUREN KNIPPING, MSc RD

Lauren is originally from Waterloo, Ontario and recently moved to Edmonton after living in Montreal and Guelph as a student.

Her favourite thing about moving to a new city is discovering the local food community and exploring new ways to enjoy the outdoors.

Lauren loves to experiment in the kitchen with new recipes that incorporate seasonal foods. Whole, plant-based foods such as whole grains, squash and legumes influence the majority of her food choices and guide her approach to helping clients improve balance in their diets. As a nutrition coach, Lauren focuses on adding whole, nourishing foods into people’s diets in new and exciting ways rather than asking them cut out all the ‘bad’ foods at once.

Lauren loves being active and mixes up her training sessions with spinning, yoga and outdoor workouts like Edmonton’s November Project. She believes that balance and moderation in food choices are key to appreciating food as fuel and would never say no to a cup of tea and a Jacek chocolate.

Kimberley website picMeet KIMBERLEY CHRISTIAN, MSc. Nutritional Sciences
Research Co-ordinator

Kimberley is our go to girl when it comes to fact-checking and staying up to date with the most recent advances in nutrition science.

After completing a bachelor’s of science at the University of Alberta, Kimberley’s appetite for evidence-based medicine and scientific recommendations led her to pursue a Master of Science Degree in nutrition as well.

Kimberley thrives on sifting through piles of information and trying to make sense of it all. There’s nothing that bothers her more than the misleading ‘nutrition recommendations’ circulating the internet that have no scientific basis or references attached to them. She makes sure that Philosophy’s clients are getting the most accurate and advanced science-based recommendations to help them meet their goals.

Kimberley lives a balanced lifestyle full of healthy food but would never turn down a bowl of fresh raspberries and chocolate.


 

Patricia BullockMeet PATRICIA BULLOCK, Chef & Culinary Genius

Patricia is Philosophy Nutrition’s culinary genius! Just hand her a few fresh ingredients and she can whip up a delicious meal to make any dietitian proud.

As part of our team, she takes the lead on recipe development and enjoys consulting with various food service businesses on menu development, staff training and kitchen design.
Patricia is a graduate of the prestigious Cordon Bleu Cooking School and holds the Canadian interprovincial Red Seal Cook Certification. She has had a wide range of experience in the culinary industry: working as a chef in a variety of kitchens from fine dining restaurants to remote mountain lodges; running her own wedding cake, catering and party supply businesses; and developing curriculum for people of all ages and experience levels.

In addition to teaching cooking classes on many diverse topics, Patricia has developed a hands-on culinary arts program for preschoolers, and collaborated on a community kitchen program; working with low-income families to develop basic cooking and budgeting skills. As a food stylist, recipe developer and food editor, she has contributed to national magazines and over 50 best-selling cookbooks.

Patricia is passionate about feeding people and empowering them to feed themselves, and those they love, better. The food that she finds the hardest to resist is Lebanese food, especially Baba Ganooj and Tabouli.
