Easy Olive Mozza Quesadilla

blank-blog-graphicWe’ve all been there… For whatever reason, cooking a big dinner just doesn’t jive with your mood or schedule, and that’s ok!

Rather than calling it quits altogether and ordering take out, it’s always great to have some quick and easy back up recipes you can make on the fly.

Count this quesadilla in as one of those recipes! With just three ingredients and only 10 minutes to make, this recipe is definitely a quick and easy crowd pleaser! It’s also a healthy, filling choice packed with healthy fats from the olives, protein from the cheese and whole grains from the tortilla. Add in a side of veggies and you’ve got yourself a meal!

Another bonus – thanks to the olives (we used “olive bar” olives packed with flavour), this recipe actually tastes a lot like a pizza! We wouldn’t say no to dipping this in marinara sauce the next time we make it. If you do, let us know how it goes!

It’s important to remember that healthy meals don’t always have to be complicated or take forever to put together. As long as you’ve got your bases covered with a complex carb, source of protein and serving of veggies, you’re good to go!

  • 1 each whole wheat tortilla 10-inch
  • 1/4 cup mozzarella cheese shredded
  • 5 large olives, mixed sliced

  • 1 each whole wheat tortilla 10-inch
  • 1/4 cup mozzarella cheese shredded
  • 5 large olives, mixed sliced
Instructions
  1. On one-half of open tortilla, spread mozzarella cheese.
  2. Add sliced olives on top of cheese, spread out evenly.
  3. Fold tortilla and place on a large pan, over medium-high heat (cheese side down)
  4. Once cheese starts to become melted (about 3-5 minutes), flip tortilla to other side. Let sit another 2-3 minutes until both sides stick together.
  5. Serve immediately.
