Simple Cajun Huevos Rancheros

Huevos Rancheros

This recipe for Cajun Huevos Rancheros is incredibly simple, quick and easy! It requires only 7 ingredients and makes a great meal for breakfast, lunch or dinner! Using egg whites and refried beans mean this recipe is packed with protein, and you’ll stay you full and satisfied.

Our take includes fresh vegetables sauteed in Cajun spices for added flavour! We were able to get some delicious multi-coloured grape tomatoes for this recipe, but any kind of grape or cherry tomatoes will do! Feel free to mix up the veggies and add whatever you have on hand.

This recipe is perfect for days when you’re pressed for time, or just don’t feel like an hour of cooking. Baked tortilla chips would be the perfect thing to round out this meal if you’re looking for something a little more filling! We topped ours with hot sauce – some other delicious options:

  • Guacamole
  • Cheese
  • Salsa
  • Cilantro or Basil
  • Lime juice

2 tsp Olive Oil
¾ cup Grape/Cherry Tomatoes, cut in half
½ cup Green Pepper, diced
1 tsp Cajun spice mix
1 cup egg whites (or 4 eggs)
½ cup refried black beans
¼ avocado, sliced
Optional: Hot sauce


  1. Add olive oil, tomatoes, green pepper, and Cajun spice mix to a stir fry pan over medium-high heat with 2 tbsp water. Sautee for 3-5 minutes, until veggies begin to soften and water has evaporated. Remove from pan and set aside.
  2. Add egg whites (or whole eggs, mixed together) to the pan. Cover and let cook on medium-high until the egg has cooked through.
  3. Add egg whites to your plate. Top with refried beans, Cajun veggies, avocado, and hot sauce if desired. Serve immediately.
